Letter from Executive Chef

“My passion for cooking started over 15 years ago at Seasons at Rose Creek golf course. I started out as a dishwasher and moved onto the line shortly after. I then spent 7 years at the Hotel Donaldson where I eventually moved up to Sous Chef under James Beard nominee Timothy Fischer and James Beard nominees Nick Winehandle and Ryan Nitschke. I moved to Minneapolis in 2013 where I began working for James Beard 2011 winner Best Chef Midwest, Isaac Becker. First at Burch Steak and Pizza Bar, then at 112 Eatery where I became Executive Chef.

People always ask me what types of food I like to cook the most and I can honestly say there isn’t one. I’ve always enjoyed cooking different flavors from various regions and countries and have never limited myself to cooking just one type of food. I enjoy cooking with classic techniques and flavors that I know work together to create unique but approachable dishes.

My goal is to create an atmosphere where members can enjoy fun, casual food done well. To me, this means using fresh ingredients and homemade recipes. While I understand the importance of menu staples, we will also offer new, seasonal dishes that are appealing and exciting.  I want the Moorhead Country Club to be somewhere that people look forward to dining at, whether it be for a quick lunch, a relaxed dinner, or a classy dining event.”
